Fitness Fridays (#boy1 makes Pumpkin Muffins)

It’s fall and it’s all about the sweaters and boots and, no, wait, we are in the south… and my kids went outside like two days ago in shorts and no shoes. Well, anyway, we like to jump into fall here in the south even if the weather isn’t technically fall-like yet. Last fall I came across this super easy, low-calorie pumpkin muffin recipe! We usually make it a few times at my house because, well, it’s so easy to make and the kids eat it and I don’t feel guilty having it with coffee.  It does call for a box cake mix so be warned! If the thought of using a box cake mix makes you want to scream you can easily Google pumpkin muffins. (I hear the internet has about everything now a days. I mean they even let me blog on it.)

This makes about 18 muffins at around 100 calories a muffin. Pair it with egg whites or fruit and, of course, coffee, and you have breakfast.  I will have full nutrition for ya at the bottom.  I have used several different mixes including a gluten-free one I found at Target; they all seem to work just fine!


Here is basically all you need to know for this recipe. I would recommend that you continue to read though, because my helper is super adorable!



You can leave out the eggs. The texture is a little different but still really good!





So the recipe calls for two eggs, but most of the first egg ended up on the counter. I can say 1.25 eggs still make great muffins.



That did not work so we spent the next 15 minutes doing this.




Finally to the stirring. In adult time this whole thing takes like 3 minutes. In kid time: like 20 minutes.

In case you aren’t a kid person and scrolled past my pictures,  here is how to make the muffins. Just throw the eggs, cake mix and pumpkin in a bowl and stir. If the batter seems thick, no worries, it should be that way.  Scoop into lined muffin tins and bake at 375 for about 20 minutes. It is that easy.
